His credo is to work on texture in all departments: cuisine, products, wine, all the way up to the restaurant setting; everything at saturne is a tribute to nature, starting with the name, an anagram of the word. ‘It’s true but not only’, says the Chef. ‘Saturn is also the Roman God of winegrowers and the protector of sowing seeds, so this name is highly symbolical’. Sven Chartier est l’un de ces jeunes chefs dont tout Paris parle. Son credo ? La matière, sous toutes ses formes : dans la cuisine, les produits, les vins et même le décor ! Tout chez lui rend hommage à la nature. Saturne n’est-il pas d’ailleurs l’anagramme de natures ? « Oui mais pas seulement, répond le chef, Saturne est aussi le dieu romain des vignerons et le protecteur des semailles, il y a une symbolique très forte. » Il travaille d’ailleurs de concert avec un sommelier averti.
